THAI 7 CHICKEN CURRY
This is one of our favorite Thai recipes. Its super easy to prepare and super comforting and delicious.
We serve it with fat cakes because the bread really soaks in all the flavor. You can never go wrong with these fragrant flavors. If hits all the spots.
- WHAT YOU WILL NEED -
- 3 Tbsp vegetable oil
- 4 skinless, boneless chicken breasts, cubed
- 3 Tbsp Cape Herb & Spice THAI 7-SPICE
- 1 bunch spring onion, finely sliced
- 4 gloves garlic, finely chopped
- 2 Tbsp ginger, minced
- 2 green chilies, finely chopped
- 100 g mange tout
- 3 Tbsp Thai green curry paste
- 2 tsp oyster sauce
- 3 tsp soy sauce
- 250 ml coconut milk
- bunch of coriander, finely chopped
- Salt and pepper, to taste
- METHOD -
Start off by spicing the chicken with Cape Herb & Spice 7 Thai Spice and leave to marinate for 5 minutes.
Next, in a heavy based pan, heat oil and slightly brown the chicken, then add in the spring onion, chili, garlic and ginger. Cook for another minute.
Then add in the curry paste, mange tout, oyster sauce and soy sauce and simmer for another 3-5 minutes.
Add in the coconut milk and coriander. Adjust seasoning.
Simmer for 7-10 minutes until chicken is tender and cooked.
Serve with rice or fat cakes and enjoy.
