ZESTY MOROCCAN CHICKEN TAGINE

- WHAT YOU WILL NEED -
- 1kg chicken pieces
- 2 Tbsp garlic, finely chopped
- 2 Tbsp Tastebud ZESTY
- 1 red onion, sliced
- ¼ cup preserved lemon, sliced
- 1 cup olives, pitted
- 1 cup chicken stock
- FOR SERVING ~ coriander leaves
- Olive oil
- METHOD -
Place the chicken pieces in a large bowl and drizzle with olive oil. Season with the chopped garlic and Cape Herb & Spice ZESTY Tastebud spice blend. Cover with cling film and place in the fridge to marinate for at least an hour. Once the chicken has marinated heat a large pot or tagine on the stove. Fry the chicken pieces all over until they have a deep golden colour, then remove from the pot and set aside. Add the onion slices to the pot and season them with two tablespoons of our new Cape Herb & Spice ZESTY Tastebud Seasoning. Cook until tender before placing the chicken back into the pot, sitting on top of the onions. Add the olives, preserved lemon and chicken stock. Bring to a simmer and then cover. Cook for 30 minutes or until the chicken is tender and cooked through. Serve on a bed of couscous with fresh chopped coriander for garnish.
