Roasts are my absolute favourite because a meal basically cooks itself. It’s the perfect go-to for a busy, working mum and Home Cook because you can get on with your day while the oven does its thing. This is a recipe I developed using Cape Herb & Spice’s delicious Mediterranean Roast Seasoning and the Sweet and Sticky Chicken Seasoning. The result is the most perfectly seasoned, moist roast chicken that will be a firm favourite at your table for years to come. For the perfect serve, you can accompany this roast with peas and carrots. Alternatively, a cold Cous Cous salad would also do the trick on the hotter days.


  • 1 whole chicken
  • Baby potatoes
  • 1 large white onion – cut into 6 or 8
  • 10 Thyme Sprigs
  • 5 Rosemary Sprigs
  • 5 garlic cloves
  • ¼ cup olive oil
  • 2 tbsps. Cape Herb & Spice MEDITERRANEAN ROAST
  • 1 tbsp. Cape Herb & Spice SWEET & STICKY CHICKEN
  • ½ tsp. salt & ½ tsp. pepper


Start off by preheatting the oven to 180˚. Then pat the chicken dry using a paper towel.

Then in a medium or large oven dish, layer half of the Rosemary, Thyme, garlic cloves and onions. Add a bit of oil to the bottom of the dish then place the chicken on the bed of herbs.

Stuff the inside of the chicken with the remaining Rosemary, Thyme, garlic cloves and onions. Then tie the chicken legs together using twine. This will help lock in flavour and keep the chicken from drying out. Season the chicken all over generously with the spices, salt and pepper. Add more seasoning if your chicken is on the larger side. Then pour over all of the remaining olive oil and use your fingers to rub it into the chicken covering the whole surface. You might need to use less oil if your chicken is small.

Place the baking tray in the oven uncovered and roast for 30 minutes. Take the oven dish out and add in the potatoes on the sides of the chicken - use a spoon to mix the spices and oil into the potatoes. Then place the oven dish back into the oven and roast for a further 40 minutes.

You can serve the chicken with peas and carrots for the perfect roast serving.
