GRILLED MUSHROOMS WITH CHICKPEA SALAD
It’s BRAAI month. We’re feeling excited. Things are starting to feel summery. We’re ready for long summer nights and braai’ed meat.
- WHAT YOU WILL NEED -
- 2 mushrooms
- 45ml vegetable oil
- 2 Tbsp Cape Herb & Spice PORTUGUESE PERI PERI
- 1/2 can chickpeas
- 1 cup salad leaves
- 1/2 cup Plain yogurt
- Juice of 1/2 lemon
- 2 Tbsp Parsley, chopped
- Salt and pepper, to taste
- METHOD -
Rub the mushrooms with oil and spice rub.
BRAAI (on the fire) or grill in the oven for 7-10 minutes for 180˚C.
To make the dressing, mix yogurt, lemon juice, parsley and salt and pepper together.
Top the cooked mushrooms with salad leaves, chickpeas and drizzle with the dressing.
Serve and enjoy.
