CURRIED MINCE 3 WAYS: 2 STUFFED SWEET POTATOES
On to our 2nd out of 3 dishes is the ever-so-delicious Stuffed Sweet Potatoes.

- WHAT YOU WILL NEED -
- 6 large sweet potatoes
- Olive oil
- Sea salt
- 1 Tbsp olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 Tbsp fresh ginger, grated
- TO SERVE
- 500g beef mince
- 6 Tbsp crème fraîche
- 1-2 Tbsp Cape Herb & Spice CAPE MALAY CURRY
- Chopped chives, for garnish
- 4 large tomatoes, diced
- METHOD -
Preheat oven to 180˚C.
Then rub the sweet potatoes with olive oil and sprinkle with salt.
Place on a baking tray and roast for 1 hour or until fork tender.
Next, heat the olive oil in a large frying pan and fry the onion until tender. Add garlic and ginger and cook until fragrant.
Add the beef mince and Cape Herb & Spice Cape Malay Curry Spice. Cook until the mince is lightly browned and add the tomatoes and cook until the tomatoes break down.
Simmer until thickened.
Slice cooked sweet potatoes down the centre and press them open. Scoop a generous amount of mince mixture into each sweet potato.
Top with crème fraîche and chopped chives and serve.
