BLACK BEAN & SMASHED AVO TACO'S

This is a delicious, quick and easy taco recipe that even meat eaters will enjoy. It’s packed with lots of flavor thanks to the great spices and fresh ingredients. The black bean filling makes for a great protein substitute. Meat-free any day.

- WHAT YOU WILL NEED -

  • 1 tsp olive oil
  • 1 red onion, diced
  • 1 can black beans, drained and rinsed
  • 1/2 can sweet corn kernels
  • 1/2 bell pepper, diced
  • 1 fresh chili, thinly sliced
  • Cape Herb & Spice TACO SPICE
  • black pepper, to taste
  • TO SERVE
  • TO SERVE
  • 4 taco shells (soft or hard)
  • salsa (of your choice)
  • avocado, smashed
  • lime, quartered
  • coriander, to serve
  • spring onion, thinly sliced
  • Cape Herb & Spice Taco spice, to taste

- METHOD -

Start by heating the oil in a medium pan. Then sauté the onion until its nice and translucent. Mash half the black beans with a fork. Then add in the whole beans and mashed beans into the pan. Also add in the Cape Herb & Spice Taco Spice and chili, bell pepper and sweet corn. Leave to cook for 5 minutes. Spoon in the mixture into the taco shells. Top with salsa and Avo. Garnish with coriander and spring onion.

Season with a bit more Cape Herb & Spice Taco Spice, serve with lime and enjoy!
