PREP TIME: 35 mins | COOKING TIME: 15 mins

For the sauce:

Add all the ingredients to a bowl.

Season with a little Cape Herb & Spice Texan Steakhouse Seasoning.

Mix until well combined.

Refrigerate until serving.

For the kebabs:

Place beef mince in a large mixing bowl.

Add the onion, garlic and parsley.

Season well with Cape Herb & Spice Texan Steakhouse Seasoning.

Mix thoroughly.

Stack tortillas.

Slice rounded tortillas edges off to create a block of square tortillas.

Keep one aside and divide the mince mixture amongst the other 5.

Press it firmly onto each one.

Stack the mince covered tortillas on top of each other and cover with the final plain one.

Slice the stack into 4 even sections.

Turn those sections onto their sides so you can see the layers facing you.

Keep them all pressed together.

Insert 4 long skewers, spacing them adequately to create 4 kebabs.

Finally slice in between the skewers to separate them.

For nice clean lines - ensure you use a very sharp knife and wipe it in between cuts.

Preheat the air fryer to 200˚C.

Transfer kebabs to the air fryer and cook for about 14 minutes, flipping halfway until cooked through and they have some lovely browning.

To serve:

While the kebabs cook, combine the salad ingredients and then divide amongst serving plates.

Plate warm kebabs on top.

Dollop over the burger sauce generously and sprinkle with spring onions.

Serve with lemon wedges and enjoy everything together!
