ROASTED CAULI BURRITO BOWLS

For a little razzle dazzle on the flexitarian front, we though we would jump on the 'latest food craze wagon' and get this brand New Year off to a healthy start. Its all happening where plant-based eating is concerned and so we have gifted you with a simple, pretty, healthy solution to get you started...take it away! 

- WHAT YOU WILL NEED -

  • 1 head of cauliflower, cut into florets
  • 1 (400g) tin chickpeas, rinsed and drained
  • 2 Tbsp olive oil
  • 2 cups cherry tomatoes, halved on long side
  • 1 Tbsp TACO SPICE
  • ¼ cup red onion, finely diced
  • Handful fresh coriander, rinsed well and stalks removed
  • Juice of half a lime
  • 2 cups brown rice, cooked
  • 1 avocado
  • 2 corn on the cob
  • 1 (400g) tin black beans, rinsed and drained
  • 1 head of cos lettuce, finely shredded
  • 1 jalapeño pepper, sliced
  • S&P
  • Olive oil

- METHOD -

Preheat the oven to 200˚C.

Place the cauliflower florets, chickpeas, Cape Herb & Spice Taco Exotic Spice and olive oil in a bowl. Toss to combine well, then transfer to a baking tray and bake for 20 minutes.

In the meantime, combine the cherry tomatoes, red onion and fresh coriander in a bowl. Season well with salt and pepper and the juice of half a lime. Mix and set aside. Rub the corn with olive oil and chargrill on a well oiled griddle pan, turning frequently. Allow to cool before slicing the corn off of the cob. Peel and dice the avocado before squeezing over some lime or lemon juice to prevent browning.

Assemble the burrito bowls by keeping each component on its own. Into the bowl, add: roasted cauliflower and chickpeas, tomato and onion mix, cooked corn, black beans, cooked rice and shredded lettuce. Top with cubes of avocado and slices of jalapeño.

Drizzle with olive oil and a squeeze of lime before serving and add a taco shell or two if desired.
