CURRIED MINCE 3 WAYS

If you enjoy warm flavour-filled mince dishes, as much as we do, then you will love this curried mince - 3 ways.

- WHAT YOU WILL NEED -

  • FOR THE BOBOTIE
  • FOR THE CURRIED MINCE STUFFED SWEET POTATOES
  • 1 Tbsp olive oil
  • 6 large sweet potatoes
  • 1 large onion, diced
  • Olive oil
  • 2 cloves garlic, minced
  • Sea salt
  • 2 Tbsp fresh ginger, grated
  • 1 Tbsp olive oil
  • 500g beef mince
  • 1 large onion, diced
  • 1-2 Tbsp Cape Herb & Spice CAPE MALAY CURRY
  • 2 cloves garlic, minced
  • 4 large tomatoes, diced
  • 2 Tbsp fresh ginger, grated
  • ½ cup raisins
  • 500g beef mince
  • FOR THE EGG CUSTARD TOPPING
  • 1-2 Tbsp Cape Herb & Spice CAPE MALAY CURRY
  • 2 XL eggs
  • 4 large tomatoes, diced
  • 160ml milk
  • TO SERVE
  • 6 bay leaves
  • 6 Tbsp crème fraîche
  • ⅛ tsp turmeric
  • Chopped chives, for garnish
  • Pinch sea salt
  • FOR THE CURRIED MINCE HAND PIES
  • CURRIED MINCE HAND PIES
  • 1 Tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 Tbsp fresh ginger, grated
  • 500g beef mince
  • 1-2 Tbsp Cape Herb & Spice CAPE MALAY CURRY
  • 4 large tomatoes, diced
  • 1 large egg
  • ± 1 Tbsp sesame seeds
  • Tomato chutney, to serve

- METHOD -

1. BOBOTIE (Makes: 6 Individual Boboties; Prep: 15 mins; Cook: 25 mins)

Start off by preheatting the oven to 180˚C.

Heat the olive oil in a large frying pan. Then fry the onion until tender. Add garlic and ginger and cook until fragrant. Add the beef mince and Cape Herb & Spice Cape Malay Curry Spice.

Cook until the mince is lightly browned. Then add the tomatoes and cook until the tomatoes break down and simmer until it has thickened.

Next up, divide the mince mixture into 6 ramekins and fill them half way up and scatter the raisins over the mince and then add a final layer of mince. Smooth the tops very well.

Then beat the eggs with milk, salt and turmeric. Pour custard mixture gently over the mince and place one bay leaf on top of each bobotie.

Bake for ±20 minutes until the custard is set and golden brown.

Serve with a side salad and fruit chutney.

 

2. CURRIED MINCE STUFFED SWEET POTATOES (Makes: 6 ; Prep: 10 mins; Cook: 1 hour)

Preheat oven to 180˚C.

Then rub the sweet potatoes with olive oil and sprinkle with salt.

Place on a baking tray and roast for 1 hour or until fork tender.

Next, heat the olive oil in a large frying pan and fry the onion until tender. Add garlic and ginger and cook until fragrant.

Add the beef mince and Cape Herb & Spice Cape Malay Curry Spice. Cook until the mince is lightly browned and add the tomatoes and cook until the tomatoes break down.

Simmer until thickened.

Slice cooked sweet potatoes down the centre and press them open. Scoop a generous amount of mince mixture into each sweet potato.

Top with crème fraîche and chopped chives and serve.

 

3. CURRIED MINCE HAND PIES (Makes: 12 hand pies; Prep: 20 mins; Cook: 45 mins)

Heat the olive oil in a large frying pan and fry the onion until tender. Add garlic and ginger and cook until fragrant.

Add the beef mince and Cape Herb & Spice Cape Malay Curry Spice. Cook it until the mince is lightly browned. Then add the tomatoes and cook until the tomatoes break down. Simmer until thickened.

Cool the mince mixture completely.

Next, preheat the oven to 180˚C.

Whisk the egg with a splash of water.

On a lightly floured surface, roll out the pastry dough until 2-3mm thick.

Using a medium sized bowl cut out 4 circles in each sheet of pastry so you have 12 pastry circles. Then, spoon the cold mince mixture onto one half of each circle.

Brush the circle with a little egg wash and then seal each pie. Press down firmly to close them tightly.

Cut two small slits into each pie, egg wash them all over and sprinkle with sesame seeds.

Place on a lined baking tray and bake for 25-30 minutes until golden brown and crisp.

Serve the hand pies with tomato chutney for dipping.
