BEEFY THAI MANGO LETTUCE WRAPS

- WHAT YOU WILL NEED -

  • 400g beef steak, sliced into thin strips
  • 1 sachet THAI MANGO & COCONUT
  • 1 red or yellow sweet pepper, sliced into thin strips
  • Mung bean sprouts
  • Peanut/ vegetable oil
  • Lettuce leaves, washed
  • Fresh coriander
  • Spring onions, finely sliced
  • Salted cashew nuts, toasted

- METHOD -

Marinate the beef in the spice paste for at least an hour. Stir fry the beef strips over a high heat in oil together with the sweet pepper and mung beans until cooked to your liking. Taste and add salt if necessary.  Roll the stir fry mixture up in large lettuce leaves along with healthy handfuls of coriander, spring onion and cashews.
