EASY LEMON PEPPER CRUSTED TUNA

Summer is the season for seafood, especially if it is sustainably sourced, fresh and delicately seasoned. This is the perfect lunchtime recipe to be shared with friends, family, and a light, crisp Pinot Noir of course!  

 

- WHAT YOU WILL NEED -

  • Zest from 2 lemons
  • ¼ cup breadcrumbs
  • 2 Tbsp olive oil
  • 2 Tbsp parsley, finely chopped
  • 1 Tbsp NEW CERAMIC BLACK PEPPERCORNS GRINDER
  • Extra olive oil for fish
  • 2-3 tuna pieces, fresh
  • Baby potatoes for serving

- METHOD -

Toss all the crust ingredients together in a bowl, and mix well to combine. Place the tuna pieces in a baking dish and top each piece with 1-2 tsp of the crust mixture. Drizzle a little extra olive oil over the fish before placing the baking dish under the grill for 6-8 minutes, or until just cooked. Remove from oven and top each piece of tuna with a slice of lemon, then plate up and serve with herbed baby potatoes. Season to taste.
