EASY CHRISTMAS SIDES 3 OF 3: POTATO AND PEAS WITH MINT AND FENNEL

Fresh, healthy, tasty and incredibly easy – that’s the way we’re going with our Christmas sides this year. The secret to elevating it to festive food? It’s all in the spice!

- WHAT YOU WILL NEED -

  • FOR THE DRESSING
  • FOR THE SALAD
  • ¾ cup of low fat plain yoghurt
  • 600g cooked baby potatoes
  • 1 plump clove garlic, finely minced
  • 200g frozen peas, defrosted by pouring over boiling water
  • zest of one lemon, finely grated (a microplane work best here)
  • 2 wheels of feta, crumbled or diced
  • 1 tsp Cape Herb & Spice MEDITERRANEAN ROAST
  • 5cm cucumber, peeled, seeds removed and finely grated & 2 Tbsp water
  • bunch of mint

- METHOD -

Plate up the potatoes, peas and feta and scatter over mint. Mix together all the dressing ingredients and it’s time to serve!
