CREAMY PORTUGUESE TOMATO SEAFOOD PASTA

There is nothing better than a lazy weekender summer lunch that smacks of the sea and can be paired with a crisp unwooded Chardonnay. Here we have a delightful option that showcases one of our newer products that is in the versatile fruit and spice paste range; created with a concentrated pure fruit base infused with spices to form a well balanced taste solution for easy in-home cooking...  

- WHAT YOU WILL NEED -

  • 1 lrg onion, finely chopped
  • 2 Tbsp olive oil
  • 1 sachet PORTUGUESE TOMATO
  • 1 cup fresh cream
  • 600g seafood Marinara mix (mussels, prawns, firm white fish, calamari)
  • 1 packet dry linguini

- METHOD -

Fry the onion over medium heat in olive oil until soft. Add the Cape Herb & Spice Portuguese Tomato Paste and fry for a few seconds. Add the cream and stir to dissolve the paste. Add the seafood and cook over low heat in the tomato-cream sauce until done. In the meantime, cook the pasta in loads of well-salted, rapidly boiling water. Once al dente, add pasta to the pan of sauce and toss to coat. If it is a bit dry for your liking, add a spoonful or two of the pasta cooking water to moisten. Serve right away with plenty of freshly grated parmesan.
