CHIPOTLE FISH TACOS

Love Taco's but prefer them with fish? Then this dish is especially designed for you. We're bringing together the yummy tortilla, filled with a delicate Kingklip, your admired veggies and this is flavoured by the Cape Herb & Spice Chipotle Seasoning, to ensure a complete pallet satisfaction.

- WHAT YOU WILL NEED -

  • SLAW
  • ½ cup greek yoghurt
  • 4 Tbsp lime juice
  • ½ tsp sea salt flakes
  • ½ tsp ground cumin
  • 3 cups cabbage, shredded
  • ½ cup tomatoes, sliced into little cubes
  • ¼ cup spring onions, sliced
  • ½ cup coriander leaves
  • SAUCE
  • ¾ cup mayonnaise
  • 1 Tbsp lime juice
  • 1 tbsp CHIPOTLE CHILLI
  • BATTER
  • 1 cup flour
  • 1 tsp sea salt flakes
  • 1 Tbsp CHIPOTLE CHILLI
  • 1 tsp paprika
  • 250-300ml beer (alcoholic or not)
  • 800g Kingklip or any firm white fish, cut into 2 cm thick pieces
  • 4 corn tortillas
  • 4 tsp pickled onions
  • 2 litres nautral frying oil
  • Fresh lime for serving

- METHOD -

For the slaw - in a medium sized bowl combine the greek yoghurt, lime juice, salt and cumin. Make sure you whisk well. To that bowl, add the cabbage, tomatoes spring onions and coriander. Toss to coat and set aside in the fridge.

For the sauce - mix all the ingredients together and keep in the fridge.

For the batter - whisk all dry ingredients together. Drizzle in the beer and whisk until smooth. The batter should have the consistency of thick paint.

Preheat a deep pot of oil to 180˚C. Prep a baking tray with paper towel on it and a separate one with a wire rack.

Dip each piece of fish into the batter. Allow the excess to fall off and then fry in oil until golden brown on all sides. Then drain the fish pieces on the paper towel for a few seconds and then move them onto the wire rack so they do not get soggy.

Time to assemble the tacos. To do this, spread each corn tortilla with Cape Herb & Spice Chipotle Seasoned mayo. Then top with a generous spoonful of slaw. Following that, add two pieces of fish to each taco and top with a few pieces of pickled onions. Serve with plenty of fresh lime wedges and enjoy.
