We flash freeze dry these herbs at harvest time, retaining their colour and flavour.

Dill is an incredibly brittle herb, which has an intense liquorice flavour and marries well with fish and seafood dishes. It is quite a pungent herb that most need to acquire the taste for, thus use sparingly initially unless you are familiar with the herb. It works well if grilled on fish or cooked into creamy seafood sauces.
